Our Story: First came conscious sourcing, which includes a commitment to environmental sustainability, the responsibility to the communities where the coffee is grown, and careful attention to the coffee growing process itself. Coffee is mostly treated as an industrial crop and often commercial coffee is sprayed with pesticides and sometimes left to mold or ferment before it’s shipped. Therefore, Purity only sources organic beans and tests all green coffee for mold, pesticides, and Ochratoxin A (which can cause kidney damage).
However, organic coffee beans were merely to be the starting point. To deliver a coffee optimized for health benefits, the organic coffee needed to also be specialty-grade. Specialty-grade signifies that the coffee has been carefully inspected and sorted to ensure that the beans are free from defects – most notably chips and cracks. Uniform, perfectly shaped beans allow for a much more even roast – greatly reducing the number of carcinogenic compounds produced when coffee is roasted unevenly.
Next in optimizing coffee for health came the roasting process. Many commercial coffee producers eliminate the toxins and mold that develops on coffee by roasting them away. However, according to Purity’s scientists, toxins don’t just disappear, they merely change their form. Additionally, cancer-causing compounds called Polycyclic Aromatic Hydrocarbons (or PAHs) develop as a result of smoking or over-roasting coffee beans. Through extensive lab testing, Purity uses a unique roasting protocol to retain maximum antioxidants in coffee beans while completely avoiding PAH development and reducing the amount of Acrylamide (which occurs as a result of under-roasting).
The last area for ensuring coffee is as healthy as it can be lies in its storage, packaging, and delivery. All foodstuffs are capable of going stale or even rancid, and coffee is no exception. However, coffee can often languish on warehouse and even supermarket shelves for months, losing its healthful potency and becoming more likely to cause digestive discomfort. Purity’s founders made a commitment to freshness, only storing green beans for 15 months, roasting only according to the number of orders received, and shipping the roasted beans to the customer within 48 hours of roasting in bags flushed with nitrogen.
